After spending 15 years as a head chef, working in a wide range of restaurants and running kitchens all around the country and abroad I set up a small production unit on a farm during Covid, making sausages designed for slow cooking,BBQs and smokers.
After spending a lot of time in Brazil and enjoying the culture of outside BBQ, cooking over fire and spending time with friends and family I realised that what we have back home was severely lacking in texture, flavour and creativity.
I use courser grind rare breed ethically reared local pork , combined with with fresh,seasonal ingredients and flavours you will never find anywhere else!
I avoid packet seasonings and additives usually used in sausage making and the majority of the range is also gluten free and high in protein and low carb.
