Goats Cheese and Onion or Leek Quiche

Serve with beetroot salad or homemade
carrot and cabbage coleslaw with Fussels mayonnaise.


For the Pastry

For the filling


1a) Rub the flour, with 1 tspn of salt, with the butter.

1b) Add the egg and a tbspn of cold water, then knead
to a dough.

1c) Wrap in cling fi lm and chill for 40 minutes.

2) Preheat the oven to 220 degrees centigrade or
gas mark 7.

2a) Roll the pastry out for a 23 cm or 9 " quiche dish.

2b) Line the dish with baking parchment and fi ll with
dried beans or rice. Place in the middle shelf of the
oven and bake for 15 minutes or until pale golden.

3) Meanwhile chop finely either 2 onions or leeks
and fry slowly in rapeseed oil.

4)Mix the cream, eggs and egg yolks in a bowl and
grate the Goats Cheese.

5) Add the fried onion / leek to the egg and cream
mixture.

6) Remove the pastry from the oven and pour the
filling in, then sprinkle the goats cheese over the top.

6a) Turn the oven down to 180 degrees / gas mark 4
and bake for 30 minutes

6b) Switch the oven off and leave in for 10 minutes
before removing.
