1) Roll out the pastry to an approximate 10" square.
2) Place a few torn basil leaves in the centre of the
pastry.
3) Add a few twists of black pepper.
4) Place whole cheese on the top of the basil and
pepper.
5) If using cherry tomatoes, pile them on and around
the cheese.
(otherwise , place tomato slices under the cheese
around the sides and on top).
6) Scatter the rest of the basil on top of the tomatoes.
7) Add another few grindings of black pepper.
8) Draw the diagonal corners of the pastry up over
the filling. Seal with beaten egg.
9) Brush top of pie with beaten egg.
10) Bake until puffed and golden
- about 20 - 25 minutes.
