Lemony Sheep's Milk Yoghurt Ice

A little Indulgence, whilst still feeling saintly.

1) Make a sugar syrup simply by putting the sugar
with 150ml of water and simmer gently for a few
minutes until the sugar has completely dissolved.
Set aside and cool.

2) Add the milk to the yoghurt, beating in lightly.
Don't worry about a few lumps, there is plently
of stirring to be done..

3) Grate the zest of the lemons fi nely and
squeeze out the juice.

4) Whisk the sugar syrup into the milk and
yoghurt mix, then add the lemon juice and zest.

5) Pour into a freezeable container, and freeze
for 30 minutes, then stir with a fork to break up
the ice crystals, refreeze for another 30 minutes
and repeat.

6) Freezing may take overnight, to make your ice
really fi rm. The more you stir the smoother the
ice will be!
